Mmmm, fresh raspberries on the Forth of July. Truth be told, I wasn’t very partial to raspberries until I tasted the smaller, sweeter ones that you can pick yourself and eat right away. The combination of frozen raspberry meringue and crumbly chocolate crust in this pie will surely lite your sparklers!

18 chocolate graham crackers
1/4 cup powdered sugar
2 TBSP canola oil
2 TBSP fat free milk
1 TBSP butter
4 cups fresh raspberries
2 TBSP lemon juice
1/4 tsp salt
3 egg whites
1/2 cup granulated sugar
3/4 tsp cream of tartar

You better sit down for this one. Now, this is what I call chocolate ice cream, it’s dark, it’s dense and it’s deliriously delicious. A little bit goes a long way. Save this one for special occasions!

1 1/2 cup whole milk
1 1/3 cup heavy cream
1 vanilla bean
3/4 cup sugar
3/4 cup Dutch process cocoa
2 large eggs
1 large egg yoke
1 teaspoon vanilla
8 oz bittersweet chocolate

Had I not been coo-coo for basil I probably would not have tried this one. Am I ever glad I did! The basil flavor is delicate and the lemon element compliments it well. I used coconut milk as the base and the Wheeler del Toro slurry method for thickening the ice cream. I’m calling in the taste testers for a consensus but I do believe this one is a keeper!

1c packed chopped basil leaves
3/4c cane sugar
2 cans coconut milk (full fat)
3T arrowroot powder
pinch of salt
zest of 1 lemon
2 Tablespoons lemon juice
1 Tablespoon rum

One of our taste testers has voted this experiment the summer’s best! We used the most amazingly sweet and juicy fresh blueberries available, Sakuma Bros from Skagit Valley, WA.

2 cups cane sugar
3/4 cup (6 ounces) 1/3-less-fat cream cheese, softened
4 large egg yolks
3 cups 2% reduced-fat milk
1 cup half-and-half
3 cups fresh blueberries, coarsely chopped
1/4 cup powdered sugar

It’s hard to go wrong with coconut products, pineapple and rum. This sorbet works great served frozen with toasted coconut on top, as a cocktail with added rum, or with vanilla yogurt added to make a smoothie.

3 cups cubed fresh pineapple
1/2 cup cane sugar
1 1/2 cup light coconut milk
1 1/2 cup cup cream of coconut
1 tsp coconut extract
2 Tablespoons Rum

Refreshingly limey. The graham cracker crust really puts it over the top, in a good way. I added some extra crumbled graham crackers after freezing process, before placing the ice cream in the freezer to “ripen.”

1/2 cup cane sugar or sweetener of choice
2 tablespoons cornstarch
1/8 teaspoon salt
2 cups 2% reduced-fat milk
1 cup half-and-half
1 egg yolk
2 teaspoon Key lime zest
1/3 cup Key lime juice
1/2 cup coarsely crushed graham crackers

Dates. Just discovered how amazingly good they are. This dairy-free ice cream recipe is sweetened with dates and uses the Wheeler Del Torro method for thickening your ice cream. It’s a brilliant way to help keep your ice cream creations smooth and creamy and a lot less fattening. I am really liking coconut milk based ice cream so far!

2 cups chopped pitted dates.
1 (14 oz) can light coconut milk.
1 (14 oz) can full fat coconut milk.
3 Tbsp arrowroot powder.
2 tsp vanilla extract.
2 Tbsp rum, (this keeps the ice cream softer and more scoop-able as it freezes).

Thai Iced Coffee Pops

Krystina Castella: Thai iced coffee is a very sweet, creamy refreshment brewed by street vendors in a cloth bag and served in a plastic bag with plenty of crushed ice and a straw. These Thai Iced Coffee Pops are based on traditional recipes and serving methods. The Thai coffee powder (oliang) and the milk are poured over crushed ice and not mixed, creating one tasty layer on top of another.

1/2 cup sweetened condensed milk, or to taste
1/2 cup evaporated milk
1/2 cup milk
2 cups Thai coffee powder (see Note)
